PROFI Vanilla Protein Powder | Baked Buckwheat Granola

Makes 6-7 servingsBaked Buckwheat Granola in a Bowl

INGREDIENTS:

  • 1 ½ cups Buckwheat, sprouted overnight
  • 1c Sunflower Seeds
  • 1c Pumpkin Seeds
  • 3 tbsp Sesame Seeds
  • ¼ tsp Salt
  • 1 ½ tbsp Olive Oil
  • 2 tbsp Maple Syrup
  • ⅓ c Dried Blueberries
  • ⅓ c Dried Cranberries
  • 1 tsp Cinnamon
  • Dash Nutmeg
  • Profi Vanilla

 

STEPS:

  • Rinse buckwheat groats in a colander until the water runs clear
  • Soak buckwheat in a jar with water for 6 hrs
  • Strain water from the jar and allow the jar with buckwheat to sit inverted over a colander for 6 hrs until sprouts appear 
  • Mix all ingredients together in a large bowl
  • Preheat oven to 325F
  • Spread out the granola over a few baking sheets, doing so will allow the granola to cook quicker and more evenly
  • Bake 20 mins ish or until browned, tossing halfway through
  • Let cool before serving with fresh fruit, vegan yogurt, or plant-based milk
