“It tastes like a peanut butter-gingerbread-oatmeal cookie all in one!”

Makes approx. 35 cookies

Ingredients:

4 Tbsp ground flax seed
10 Tbsp water
1 1/4 Cup natural peanut butter
3/4 Cup coconut sugar
3 Tbsp molasses
1/2 Tsp baking soda
2 Tsp apple cider vinegar
1 Tsp cinnamon
1/2 Tsp nutmeg
1/2 Tsp ginger
2 Scoops PROFI Vanilla
3/4 Cup gluten free oats
1/2 Cup mini dairy free semi sweet chocolate chips

Directions:
  1. Preheat oven to 350F
  2. Mix flax and water in small bowl and set aside
  3. In a large bowl combine all ingredients except for protein, oats and chocolate chips – mix until smooth
  4. Add flax mixture to peanut butter mixture and combine
  5. Mix in protein powder followed by oats then chocolate chips
  6. Drop a Tbsp of dough onto parchment lined baking sheet
  7. Bake for 10-12
