PROTEIN BOOSTER | SAVOURY

Makes 6-9 Stuffed Mushrooms

‘Walnut Meat’ Ingredients:
  • 1 1/2 cup Walnuts
  • 1 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Red Chili Flakes
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Dried Parsley
  • 1/4 tsp Nutritional Yeast
  • 1 scoop PROFI Protein Booster – unsweetened
  • 1 tbsp Tamari
  • 1/2 tsp Liquid Smoke
  • dash of Black Pepper
Stuffed Mushroom Ingredients:
  • 6-9 Cremini or White Mushrooms
  • Vegan Cheese (of your choice)
  • 1 tbsp Olive Oil
Directions:
  1. Blend walnuts in a food processor or high-speed blender until they take on the look of ground beef.
  2. Stir in the rest of the walnut meat ingredients, combine well.
  3. Drizzle a baking pan with the olive oil and remove the stems from your mushrooms.
  4. Preheat oven to 350F.
  5. Stuff about 1 tbsp of walnut meat into the mushrooms, and top with your vegan cheese of choice.
  6. Bake for 15-20 minutes or until the mushrooms have softened and the cheese is melted.
  7. Serve with fresh parsley and a crack of black pepper!
