PROTEIN BOOSTER | SAVOURY
Makes 6-9 Stuffed Mushrooms
‘Walnut Meat’ Ingredients:
- 1 1/2 cup Walnuts
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/4 tsp Red Chili Flakes
- 1/2 tsp Smoked Paprika
- 1/4 tsp Dried Parsley
- 1/4 tsp Nutritional Yeast
- 1 scoop PROFI Protein Booster – unsweetened
- 1 tbsp Tamari
- 1/2 tsp Liquid Smoke
- dash of Black Pepper
Stuffed Mushroom Ingredients:
- 6-9 Cremini or White Mushrooms
- Vegan Cheese (of your choice)
- 1 tbsp Olive Oil
- Blend walnuts in a food processor or high-speed blender until they take on the look of ground beef.
- Stir in the rest of the walnut meat ingredients, combine well.
- Drizzle a baking pan with the olive oil and remove the stems from your mushrooms.
- Preheat oven to 350F.
- Stuff about 1 tbsp of walnut meat into the mushrooms, and top with your vegan cheese of choice.
- Bake for 15-20 minutes or until the mushrooms have softened and the cheese is melted.
- Serve with fresh parsley and a crack of black pepper!
