COOKIES AND CREAM PROTEIN POWDER | KID-FRIENDLY | UNIQUE DIY

Makes approximately 30 cups

BROWNIE CUPS:
  • ½ cup Sugar
  • ¾ cup Dark Brown Sugar
  • 1 tsp Salt
  • ½ cup Coconut Oil, melted
  • ¼ cup Non-Dairy Milk
  • 1 tsp Vanilla
  • 1 cup Flour
  • ½ c Cocoa Powder
  • ½ tsp Baking Soda
  • 115g Choc Chips

FILLING:

  • 1 scoop PROFI Cookies and Cream Protein
  • 1 1/2 cup Cashews, soaked
  • ¾ cup Almond Milk
  • ¼ cup Maple Syrup
  • 2 tbsp Coconut Oil, melted
  • 2 Vanilla Beans, Scraped or 1 tsp Vanilla Extract
  • Oreo crumble to top

STEPS:

  • Blend all filling ingredients, set aside
  • Cream together oil and sugars
  • Whisk in ND Milk and Vanilla into the cream sugar
  • Sift together the dry ingredients into another bowl
  • Fold the dry ingredients into the wet ⅓ at a time, being careful not to overmix
  • Chill the dough covered in the fridge for 1 hr
  • Preheat oven to 350F and spray mini muffin tins with oil
  • Scoop ~1 tbsp of dough into each muffin tin, press down to fit the shape of the tin
  • Bake for ~10-12 minutes
  • Press down carefully into each brownie with shot glass to make cup shapes, this works best if you oil the bottom of the glass
  • Bake for 7 more mins
  • Cool fully on a rack
  • Fill with Cookies and Cream filling and chill in the fridge or freezer until firm
