COOKIES AND CREAM PROTEIN POWDER | KID-FRIENDLY | UNIQUE DIY
Makes approximately 30 cups
BROWNIE CUPS:

- ½ cup Sugar
- ¾ cup Dark Brown Sugar
- 1 tsp Salt
- ½ cup Coconut Oil, melted
- ¼ cup Non-Dairy Milk
- 1 tsp Vanilla
- 1 cup Flour
- ½ c Cocoa Powder
- ½ tsp Baking Soda
- 115g Choc Chips
FILLING:
- 1 scoop PROFI Cookies and Cream Protein
- 1 1/2 cup Cashews, soaked
- ¾ cup Almond Milk
- ¼ cup Maple Syrup
- 2 tbsp Coconut Oil, melted
- 2 Vanilla Beans, Scraped or 1 tsp Vanilla Extract
- Oreo crumble to top
STEPS:
- Blend all filling ingredients, set aside
- Cream together oil and sugars
- Whisk in ND Milk and Vanilla into the cream sugar
- Sift together the dry ingredients into another bowl
- Fold the dry ingredients into the wet ⅓ at a time, being careful not to overmix
- Chill the dough covered in the fridge for 1 hr
- Preheat oven to 350F and spray mini muffin tins with oil
- Scoop ~1 tbsp of dough into each muffin tin, press down to fit the shape of the tin
- Bake for ~10-12 minutes
- Press down carefully into each brownie with shot glass to make cup shapes, this works best if you oil the bottom of the glass
- Bake for 7 more mins
- Cool fully on a rack
- Fill with Cookies and Cream filling and chill in the fridge or freezer until firm
