COOKIES & CREAM PROTEIN POWDER | BAKED-GOOD | VEGAN

Makes 8 Bagels

Cookie Swirl Bagel Ingredients:

  • 5 cups Warm Water
  • 1 pack or 2 ½ tsp Active Dry Yeast
  • 5 tsp Salt
  • 3 tbsp Sugar
  • 5 cups All Purpose Flour
  • 1 scoop PROFI Cookies & Cream
  • Add after first rise: 3 tbsp Cocoa Powder & 1 tsp Vanilla Extract
Cookie Cream Cheese Ingredients:
  • 1 cup Cashews, soaked overnight
  • 1 tbsp Lemon Juice
  • ¼ tsp Salt
  • 2 tbsp Coconut Oil, melted
  • 2 tsp Nutritional Yeast
  • 1 scoop PROFI Cookies & Cream
  • ½ cup Oat Milk
  • 1 tsp Vanilla Extract
  • 6 Crushed Oreos
Bagel Directions:
  1. In a mixing bowl, whisk together sugar, warm water, and yeast – sit for 5 minutes until frothy and active.
  2. Sift flour, PROFI Cookies & Cream, and salt into another bowl, mix to fully combine.
  3. In a stand mixer, or by hand, combine the wet and dry ingredients and knead for 10 minutes or until a smooth and supple dough forms.
  4. Transfer the dough in an oiled bowl. Cover and let rise for an hour or until the dough doubles in size in a warm spot.
  5. While this rises you can make your cream cheese. (See below).
  6. After the dough is doubled in size, punch the dough and split into two equal sections (use a scale for accuracy).
  7. To one portion of the dough, add the cocoa powder, and to the other, add the vanilla – knead these to well incorporate
  8. Allow these to rise again for about 10 minutes.
  9. After your dough has risen again, divide each section into 8 equal portions using a scale.
  10. Lightly flour your counter or work surface, and roll one vanilla and one chocolate dough ball into evenly sized logs.
  11. Braid the two flavours together and pinch the ends to create a bagel shape. Leave an inch hole in the middle.
  12. Repeat this process with the other 7 bagels.
  13. In a large pot of water, add 1 tsp agave, 2 tsp baking powder, and ¼ tsp salt – bring this to a rolling boil.
  14. Line a baking tray with parchment paper and allow the bagels to rise while the water boils.
  15. Once the water is boiling, boil each bagel for 2 minutes on each side.
  16. While the bagels are boiling, preheat your oven to 425°F.
  17. Bake the bagels for 20 minutes or until golden and fluffy.
  18. Allow to cool. ENJOY!
Cream Cheese Directions:
  1. In a high-speed blender, blend all ingredients except Oreos until smooth and creamy. Scraping down the sides if needed.
  2. If you need, add oat milk 1 tbsp at a time to help with blending, but the less oat milk the more of a cream cheese texture you will get.
  3. Crush the Oreos and mix it in by hand.
  4. Store in the fridge for up to a week.
