INGREDIENTS:

SAUCE:

  • ¼ cup pumpkin seeds (toasted), soaked for 1 hour
  • ¼ cup flat parsley
  • 1 clove garlic garlic
  • 1 tsp ground cumin
  • 1 tsp maple syrup
  • 1 tsp lime zest
  • 1 tbsp tahini
  • 2 tbsp fresh lime juice
  • sea salt & black pepper to taste
  • ½ cup water
  • 1 scoop PROFI Booster Protein

BOWL:

  • ½ cup white beans
  • 1 cup rice, cooked
  • ½ red onion, sliced
  • 1 cup brussel sprouts, roasted
  • 2 cups kale, chopped and steamed
  • Parsley and toasted pumpkin seeds to garnish

STEPS:

  • Roast Brussels, make your rice, prep your veg
  • Blend tahini, toasted pumpkin seeds, parsley, garlic, cumin, maple syrup, lime juice, sea salt & water until smooth
  • Assemble bowl, garnish and serve
