INGREDIENTS:

  • ¾ cup Mung Beans (yellow split peas), soaked overnight
  • 1 ¼ tsp Black Salt
  • 1 Scoop PROFI Booster Protein
  • ½ tsp Onion Powder
  • ¾ tsp Turmeric
  • 1 ⅓ cup Canned Coconut Milk
  • 2 tbsp Olive Oil
  • ¼ cup Chickpea Flour
  • 1 ¼ tsp Baking Powder
  • Thinly sliced red onions
  • Cherry Tomatoes
  • Fresh Herbs
  • Vegan Cheese (soft)

STEPS:

  • Blend all ingredients mung beans through to baking powder in a high-speed blender
  • Preheat oven to 375F
  • Pour egg mixture into an oiled oven-safe skillet, and add on top of the veggies
  • Once hot, transfer to the oven and bake for 10-15 minutes
  • Serve with herbs and parmesan cheese
