• 1 large yellow onion chopped up
  • 2 – 3 cloves garlic, minced
  • 3 tsp garam masala
  • 1tsp ground coriander
  • ¾ tsp cumin, cinnamon & ginger
  • ¼ – ¾ tsp cayenne pepper
  • 1¼ cup low sodium vegetable broth
  • 2¾ cups plain (important) tomato sauce
  • 1 tbsp maple syrup (or brown sugar)
  • ⅓ cup soaked cashews
  • 1 bag of soy curls (or 3 cups chickpeas)
  1. Get your rice cooking
  2. If using soy curls, start soaking them in water for 10 minutes
  3. Soak your cashews in warm water
  4. Saute your onions until translucent with small splashes of water, add garlic along with all your spices and saute with a 1/4 cup of the veggie broth.
  5. Add the remaining 1 cup veg  broth, tomato sauce and maple syrup and continue cooking for around 6-8 minutes.
  6. Take your cashews, put them in a blender with 1/2 cup of the butter trickin sauce that is currently cooking and blend it all together. Add it back into the sauce in the stove, this will make it nice and creamy.
  7. Add in the sou curls (or chickpeas) and continue simmering for 5-10 minutes.
