INGREDIENTS:
CAKE:
- 1 ¾ cup All-Purpose Flour
- ¾ tsp Baking Soda
- ¼ tsp Baking Powder
- ¼ tsp Salt
- 1 1/4 cup Non-Dairy Milk
- ⅓ cup Olive Oil
- ¾ cup Sugar
- 1 tbsp Lemon Juice
- 2 tbsp Earl Grey Tea
- 1 drops Lavender Essential Oil
- 1 scoop PROFI Vanilla
BUTTERCREAM:
- 1 cup (2 sticks) room temperature vegan butter
- 4 cups (450g) Powdered sugar
- 1 tbsp lemon juice
- 1 tbsp non-dairy milk
- 1 drop lavender oil
- Fresh flowers and lavender to top
STEPS:
- Bring milk to a simmer and add in the earl grey
- Allow this to infuse for 5-10 minutes
- Whisk together dry ingredients in a small bowl
- In a larger bowl beat together the olive oil, sugar, and lemon juice
- Once the milk is cooled to room temp whisk it and the lavender oil together with the wet ingredients
- Add the dry ingredients to the wet and fold gently until just combined
- Preheat oven to 350F
- Grease 6 mini (4”) cake pans
- Evenly pour the cake batter into the pans and bake for 20-22 mins or until a toothpick comes out clean
- Allow the cakes to cool fully on a wire rack before frosting
- Beat together the frosting ingredients and frost as you wish
- Top with fresh lavender or flowers and serve
