INGREDIENTS:
- 1 Baking potato, cubed
- 2 Smaller red potatoes, cubed
- 2 Parsnips, cubed
- ½ Butternut squash, cubed
- 1 Red onion, chopped
- 1 scoop PROFI Booster Protein
- 2 cups Brussel sprouts, halved
- 1 cup Rice boiled with 2 cups water and a scoop of Profi (rice from The Source Bulk Foods Roncy)
- 1 tbsp Olive oil
- Fresh thyme
- 1 tsp Salt
- Pepper to taste
STEPS:
- Prep all veg and preheat oven to 425F
- Bring 2 cups of water, 1 cup of rice, and a scoop of PROFI protein booster to a boil – simmer covered for 12 minutes and remove from heat
- Toss veg in olive oil, salt, pepper and transfer to a lined baking tray
- Top the root vegetables with fresh thyme
- Bake for 30-35 minutes or until caramelized and crispy
- Serve and enjoy!
