INGREDIENTS:

  • 1 Baking potato, cubed
  • 2 Smaller red potatoes, cubed
  • 2 Parsnips, cubed
  • ½ Butternut squash, cubed
  • 1 Red onion, chopped
  • 1 scoop PROFI Booster Protein
  • 2 cups Brussel sprouts, halved
  • 1 cup Rice boiled with 2 cups water and a scoop of Profi (rice from The Source Bulk Foods Roncy)
  • 1 tbsp Olive oil
  • Fresh thyme
  • 1 tsp Salt
  • Pepper to taste

STEPS:

  • Prep all veg and preheat oven to 425F
  • Bring 2 cups of water, 1 cup of rice, and a scoop of PROFI protein booster to a boil – simmer covered for 12 minutes and remove from heat 
  • Toss veg in olive oil, salt, pepper and transfer to a lined baking tray
  • Top the root vegetables with fresh thyme
  • Bake for 30-35 minutes or until caramelized and crispy
  • Serve and enjoy!
