INGREDIENTS:

  • 1 tbsp Olive Oil
  • 1 Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 1 tbsp fresh Ginger, minced
  • 2 tbsp Yellow Curry Powder
  • 1 tsp Cinnamon
  • 1tsp Cumin
  • ½ tsp Sea Salt
  • .5 can Fire Roasted Diced Tomatoes
  • 1.5 cans coconut milk
  • 1 scoop PROFI Booster
  • 2 tbsp LYNQ Life Empowdered
  • 1 Large Head of Cauliflower, florets
  • Rice
  • Naan
  • Cilantro

STEPS:

  • In a large pot, heat olive oil over medium heat. Saute onions until transparent, add garlic, ginger & spices and saute for one minute or until fragrant.
  • Stir in tomatoes & coconut milk and bring to a simmer.
  • Remove from heat and add PROFI Booster and LYNQ collab, blend until smooth
  • Return the mixture to the pot and boil with cauliflower florets, until fork tender – about 15 minutes.
  • Serve with rice, warm naan bread, and cilantro
