INGREDIENTS:
- 1 tbsp Olive Oil
- 1 Yellow Onion, diced
- 3 cloves Garlic, minced
- 1 tbsp fresh Ginger, minced
- 2 tbsp Yellow Curry Powder
- 1 tsp Cinnamon
- 1tsp Cumin
- ½ tsp Sea Salt
- .5 can Fire Roasted Diced Tomatoes
- 1.5 cans coconut milk
- 1 scoop PROFI Booster
- 2 tbsp LYNQ Life Empowdered
- 1 Large Head of Cauliflower, florets
- Rice
- Naan
- Cilantro
STEPS:
- In a large pot, heat olive oil over medium heat. Saute onions until transparent, add garlic, ginger & spices and saute for one minute or until fragrant.
- Stir in tomatoes & coconut milk and bring to a simmer.
- Remove from heat and add PROFI Booster and LYNQ collab, blend until smooth
- Return the mixture to the pot and boil with cauliflower florets, until fork tender – about 15 minutes.
- Serve with rice, warm naan bread, and cilantro
