INGREDIENTS:

  • 2 cups Sweet Pumpkin Rice Pumpkin + spices and booster
  • 1 cup Corn
  • 1 cup Black Beans
  • ½ Red Onion, diced
  • Handful Nacho Chips
  • 2 cups Lettuce, chopped
  • Tomatoes, chopped
  • Handful Fresh Cilantro
  • 2 fresh limes, cut into wedges
  • 2 Avocados, sliced 

PUMPKIN RICE:

  • 600g canned pumpkin
  • 1 scoop PROFI Vanilla Protein
  • 1 green pepper
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 cup coconut milk
  • 3 cup veg broth
  • 2 cups long-grain rice
  • 2 tbsp chopped cilantro
  • 1 tsp maple syrup
  • Pinch red chili flakes
  • 1 tsp ground cumin
  • ¼ tsp smoked paprika
  • ¼ tsp sea salt
  • ¼ tsp black pepper

STEPS:

  • Fry garlic and green pepper in olive oil until fragrant and soft, add in pumpkin, spices, maple syrup, and Vanilla PROFI
  • Add in the veg broth, coconut milk, and rice
  • Bring to a boil, and allow to simmer on low, covered, for 12-20 mins or until rice is cooked through
  • Stir in the chopped cilantro

BOWL:

  • Assemble Bowl and serve! 
  • Crumble the chips up throughout the bowl, or serve on the side as a way to dip in!
