INGREDIENTS:
- 2 cups Sweet Pumpkin Rice Pumpkin + spices and booster
- 1 cup Corn
- 1 cup Black Beans
- ½ Red Onion, diced
- Handful Nacho Chips
- 2 cups Lettuce, chopped
- Tomatoes, chopped
- Handful Fresh Cilantro
- 2 fresh limes, cut into wedges
- 2 Avocados, sliced
PUMPKIN RICE:
- 600g canned pumpkin
- 1 scoop PROFI Vanilla Protein
- 1 green pepper
- 2 tbsp olive oil
- 2 garlic cloves
- 1 cup coconut milk
- 3 cup veg broth
- 2 cups long-grain rice
- 2 tbsp chopped cilantro
- 1 tsp maple syrup
- Pinch red chili flakes
- 1 tsp ground cumin
- ¼ tsp smoked paprika
- ¼ tsp sea salt
- ¼ tsp black pepper
STEPS:
- Fry garlic and green pepper in olive oil until fragrant and soft, add in pumpkin, spices, maple syrup, and Vanilla PROFI
- Add in the veg broth, coconut milk, and rice
- Bring to a boil, and allow to simmer on low, covered, for 12-20 mins or until rice is cooked through
- Stir in the chopped cilantro
BOWL:
- Assemble Bowl and serve!
- Crumble the chips up throughout the bowl, or serve on the side as a way to dip in!
