1/2 Cup olive oil
2 Tbsp red wine vinegar
1 Tbsp fresh lime juice
1 clove garlic, minced
1 Tsp dried oregano
1 Tsp dried basil
1 Cup chopped cilantro

1 Tsp chili powder
1/4 Tsp red chili flakes
1 Tsp salt/pepper, to taste
1 pound Roma tomatoes, seeded and diced
1 Can black-eyed peas, drained and rinsed
1 Can black beans, drained and rinsed
1 Can super sweet corn, drained
1 Red onion, diced
1/2 Cup diced green bell pepper
1/2 Cup diced red bell pepper

*For even more spice, add in some chopped up jalapenos!

In a large bowl, combine the beans, corn, bell pepper, tomato & onion. Gently mix together.

In another bowl, whisk together the olive oil, vinegar, lime juice, garlic, oregano, basil, red chili flakes and cilantro. Pour this sauce over the black eyed mixture, then fold together until well combined. Add salt and pepper to your liking, as well as the chopped cilantro.
