BOOSTER PROFI PROTEIN | UNIQUE EATS | SUMMER FRESH

Makes 4 Servings

INGREDIENTS:

  • ½ cup Refried beans
  • 1 cup Quinoa
  • 1 cup Black Beans
  • ½ cup Corn
  • 4 Bell peppers, tops cut off
  • 3 Mushrooms, caramelized
  • 2 Garlic cloves, fried
  • 1 Red Onion, caramelized
  • 1 handful Spinach
  • Cilantro to top
  • 1 Avocado, diced
  • ½ cup Salsa
  • 1 tsp Garlic Powder
  • ½ tsp Smoked Paprika
  • ½ tsp Cumin
  • ¼ tsp Coriander, ground
  • ½ tsp Salt
  • 1 scoop PROFI Booster Protein
  • Vegan Cheese
  • Jalapeno

STEPS:

  • Caramelize mushrooms & onion, add garlic and spinach, and sautee until wilted
  • Mix all ingredients together in a bowl except for the avocado & bell peppers 
  • Stuff the peppers with the filling
  • Preheat oven to 375F, bake for 35 mins
  • top with cheese & broil until melted
  • Serve with avocado, salsa, red onion, cilantro, jalapeno, and any other toppings you desire!
