Makes 4 Servings
INGREDIENTS:
- ½ cup Refried beans
- 1 cup Quinoa
- 1 cup Black Beans
- ½ cup Corn
- 4 Bell peppers, tops cut off
- 3 Mushrooms, caramelized
- 2 Garlic cloves, fried
- 1 Red Onion, caramelized
- 1 handful Spinach
- Cilantro to top
- 1 Avocado, diced
- ½ cup Salsa
- 1 tsp Garlic Powder
- ½ tsp Smoked Paprika
- ½ tsp Cumin
- ¼ tsp Coriander, ground
- ½ tsp Salt
- 1 scoop PROFI Booster Protein
- Vegan Cheese
- Jalapeno
STEPS:
- Caramelize mushrooms & onion, add garlic and spinach, and sautee until wilted
- Mix all ingredients together in a bowl except for the avocado & bell peppers
- Stuff the peppers with the filling
- Preheat oven to 375F, bake for 35 mins
- top with cheese & broil until melted
- Serve with avocado, salsa, red onion, cilantro, jalapeno, and any other toppings you desire!
