Makes 4 Servings
INGREDIENTS:
- 4 Sweet Potatoes
- 1/2 cup Vegan Cheese Shreds
- 1 cup Vegan Sour Cream + 1 scoop Protein
- 1 cup Guac + 1 scoop Protein
- ½ cup Vegan Bruschetta
- Chives to top
- Fresh Basil to top
- ½ cup Black Beans
- ½ Pickled Jalapeno
- Faux Bacon Bits to top
- Green Onion to top
STEPS:
- Preheat oven to 425F
- Brush potatoes with oil, poke at least 8 holes on the potato with a fork, and place on a baking tray l ined with tin foil
- Bake for 45-50 minutes or until fork tender
- While your potatoes are baking prep your other serving items and add protein to the guac and sour cream
- Allow potatoes to cool for 5 minutes and serve warm
