CARAMEL COFFEE PROTEIN POWDER | GRAB AND GO | HIGH PROTEIN

Makes 14 Servings

INGREDIENTS:

– 1 cup Dates, about 8 pitted
– 1 tsp Vanilla
– 3 Ripe Bananas
– 1 cup Cauliflower, chopped
– ½ cup Apple Sauce
– ¼ cup Coconut Oil
– 2 scoops PROFI Caramel Coffee Protein
– 2 cups AP Flour
– 1 ¼ tsp Baking Powder
– 1 tsp Baking Soda
– 1 tsp Cinnamon
– ½ tsp Salt
– Pinch Nutmeg
– ½ cup Walnuts, chopped (for allergen-friendly, substitute hemp seeds and sunflowers)

CRUMBLE:

– ⅔ c Coconut Sugar
– 1 tsp Cinnamon
– 1 Scoop Profi Caramel
– ¼ tsp Salt
– ½ c Melted Butter
– 1 1/1 c Oat Flour

STEPS:

– Preheat oven to 425F
– Roast Cauliflower until soft, about 30 mins, remove from oven and let cool
– Soak dates, drain
– Put dates, banana, coconut oil, apple sauce, and cauliflower into a food processor or blender and blend until smooth
– Whisk together dry ingredients in a separate bowl
– Add wet to dry ingredients and fold to combine until the batter is hydrated
– Fold in the nuts or seeds
– To create the crumble melt the butter in the microwave, and using your hands, mush together all the ingredients until a crumble forms – it’s that easy!
– Pour ¼ cup of the batter into muffin tins
– Top with the crumble
– Bake at 425F for the first 8 mins, lower to 350 for the remaining 12, check for doneness with a toothpick
– Allow cooling at room temp for ten minutes before serving
