1 Package Firm Tofu (unflavoured or herbed is best!)
4 Spring Onions, Finely Diced
1 Clove Garlic, Minced
2 Zucchinis, Diced
1 Red Bell Pepper, Diced
1/4 Tsp Pepper
4 Tbsp Water (instead of oil)
1/2 Tsp Turmeric
1/2 Tsp Cumin
2 Tbsp Nutritional Yeast

1. Turn your stove element to medium heat. Add the water to your frying pan, and add in your diced onions.
2. Once your onions start go golden, add in your diced zucchini & bell peppers.
3. Open your package of tofu & drain any liquid. You may find it helpful to pat your tofu down with a dry cloth before crumbling.
4. When your veggies look nearly done, break apart your tofu & crumble it into your pan. Start adding all of your seasonings immediately & start stirring. Add in additional water if needed to avoid your vegetables from sticking & ensuring the spices get evenly distributed.
