VANILLA + CHOCOLATE PROTEIN POWDER | GLUTEN-FREE | BAKED GOODS

Makes 12 Cookies

INGREDIENTS:

– 1 cup Oat Flour (blend oats in a highspeed blender)
– 1 scoop Vanilla PROFI Protein
– 1 pinch Sea Salt
– ¾ cup Dates, pitted
– ½ cup Peanut Butter, Almond Butter, or Sunflower seed Butter
– 1 tsp Maple Syrup

CHOCOLATE:

– ¼ cup Coconut Oil, melted
– 1 scoop Chocolate PROFI Protein
– 1-2 tsp Maple Syrup
– Sea Salt

STEPS:

– Whisk together chocolate ingredients
– Blend all cookie ingredients until a dough forms in a food processor or high-speed blender
– Cover the dough and allow to chill in the fridge for 1 hr
– Scoop 2 tsp amounts and roll into balls, smush with a fork into a PB cookie (30g each)
– Dip cookies into chocolate, allow solidifying in the fridge for 20 minutes
